Not many people are big fans of tart, acidic homemade tomato sauce. He’s a recipe that’ll have you reaching for seconds as opposed to reaching for that Dolmio.

Ingredients

1 onion, chopped
garlic, chopped finely (I like garlic so I use about 4 cloves)
4-5 mushrooms chopped (optional)
1 tin/carton chopped tomatoes
1/4 veggie stock cube
1 teaspoon baking soda
1 teaspoon cinnamon (optional but recommended because it’s very tasty in the sauce)

Fry onions, garlic and mushrooms. Once they’re browned, add chopped tomatoes, stock cube and baking soda. Bring to the boil, let it simmer for 10-15 mins.

The baking soda is the secret ingredient. It neutralises the acidity of the tomatoes, making the sauce a lot tastier.

To make it a complete meal, add tinned beans (protein) to the sauce and serve it with pasta.

P.S. This won’t be the last you’ll be hearing about baking soda… 😉
